Good Eats: Satisfy that sweet tooth with fruit

With the spring season upon us, fruit lovers can't help but be excited about the crops of juicy peaches, sweet strawberries, and fragrant melons that will soon be arriving in grocery stores and at farmers' markets. Fresh fruit is not only delicious, it is a healthful and natural way to satisfy that sweet tooth. Below are some recipes that incorporate fresh fruit in different ways to provide light desserts and snacks.
Fruit Dip
•1 cup flavored yogurt, your choice
•1 cup sour cream
•2 tablespoons honey
Combine all ingredients in a bowl and mix well. Serve with fresh fruit. For a variation, use plain yogurt and add lemon zest and ground ginger for the flavors.
Heavenly Layer Cake
•Angel food cake, pre-packed or homemade
•1 tub whipped cream
•Diced pineapple, strawberries, blueberries, or any other fruit you want
Slice the angel food cake into five thin layers. On the bottom layer, put a generous amount of whipped cream and then your choice of fruit. Cover with whipped cream and put on the first layer. Repeat the process with the whipped cream and fruit for each of the layers. Top the cake with a thin layer of whipped cream and garnish with fresh fruit. For some extra pizzazz, try pouring a bit of strawberry or blueberry flavored syrup on the angel food cake before putting the whipped cream on.
